Recidivist hearing skippers Randy and Evi Quaid actually made it into a Santa Barbara courtroom today -- where they pleaded not guilty to felony chargers of defrauding an innkeeper.

The duo, who were taken into custody over the weekend after skipping out on 5 previous court dates, were freed on $40,000 bail after entering their plea.
The couple is accused of stiffing the San Ysidro Ranch on a $10,000 bill.

Randy and Evi Quaid are wanted -- not in Hollywood, but by law enforcement in Santa Barbara. The judge in their criminal case issued an arrest warrant after they failed to show for the FIFTH time.

And there are consequences ... the Quaids each forfeited their $20,000 bail. New bail was set at $40,000 each.
The Quaids allegedly cut and run from the San Ysidro Ranch without paying a $10,000 bill. They face charges of burglary, conspiracy and defrauding an innkeeper.

If you're counting, this makes for the fourth time Randy and Evi Quaid have failed to show up to court in Santa Barbara ... and this time, it's double their fault.
The Quaids -- who have been accused of running out on a $10,000 bill at the San Ysidro Ranch -- actually requested their case be put on the court calendar today ... and still didn't show up.
After their third no-show last week, the S.B. prosecutor told us he was filing papers for them to be extradited from Texas, where they live.

Randy and Evi Quaid could have appeared in court in Santa Barbara today to help settle their fraud case -- but they didn't, so now the Santa Barbara DA is going to have them extradited from Texas. Road trip!!!
The husband and wife team were arrested last month after they allegedly skipped out on a huge bill at the San Ysidro Ranch. The Quaids have since paid up their $10,000 bill, but they still face three felony charges -- burglary, conspiracy and defrauding an innkeeper.
Extradition usually takes about two weeks, but we're told the Quaids plan on appearing in court next week before that happens.

Randy Quaid's wife opened a can of paint -- now a police officer is opening a can of legal whoopass ... suing Evi for defamation after she plastered a giant sign on the side of a truck accusing the cop of taking illegal bribes.

Deputy James Davis -- the target of Evi's attack -- filed the lawsuit today in Presidio County, TX.
Evi painted the sign after she and Randy were arrested by Deputy Davis last month -- after warrants were issued for their arrests for allegedly stiffing a hotel in Santa Barbara.
Davis' lawyer, Jason Snell, tells us, "I represent a man who's been in law enforcement for 32 years and he's being accused of engaging in illegal activities, something he's never done."

We've learned Randy and Evi Quaid are all square with the hotel they allegedly stiffed on a roughly $10,000 bill -- but that doesn't mean they're out of the woods quite yet.

The San Ysidro Ranch -- the place where the Quaids ran up the big bill -- tells us the couple cut them a check for the remaining $5,000 balance yesterday. The first $5,000 was paid shortly after a warrant was issued for their arrest last week on three felonies -- burglary, conspiracy and defrauding an innkeeper.
The Santa Barbara County D.A. tells us they still face the original charges and are expected in court on October 19.

Randy and Evi Quaid's lawyer just told the Santa Barbara County D.A. they will be front and center in court on October 19 for their arraignment on three felony counts. Their defense ... it was all just a giant misunderstanding.

The D.A.'s office tells us the Quaids' lawyer said the couple -- who have been accused of skipping out on a $10,000 bill at the San Ysidro Ranch -- didn't think they had to pay the bill before they left ... they thought they could pay at a later date.
The lawyer tells us the bill got lost in the mail because they moved -- and the couple has now paid the bill in full.
The D.A. is not ready to drop the charges and will be all ears on Oct 19.
Stay tuned.

The enormous sign Evi Quaid made last week -- which accused her arresting officer of taking bribes -- somehow caught fire this weekend ... and lucky for everyone, the Quaids weren't around to complain about it.

Law enforcement sources say the Quaids skipped town before Evi's sign caught fire on Saturday -- and as of right now, cops don't have any clue as to who's to blame for the flame.
One thing is clear ... someone in Marfa, Texas isn't amused by Evi's antics -- and considering her recent track record with the local police, we don't expect the minor crime to get solved any time soon.

Here's Randy Quaid's mug shot after he was arrested for allegedly stiffing a swanky hotel (left) -- and former Iraqi President Saddam Hussein after he was captured by US forces (right).

One of these guys was nationally lampooned.
We're just sayin'.

TMZ has obtained the detective's sworn statement in the Randy/Evi Quaid hotel caper -- and if you believe the cop, Randy and Evi hatched a sinister plot to fleece some ritzy hotels.

Santa Barbara County Sheriff's Detective Rod Forney wrote in a declaration in support of the arrest warrant ... Randy and Evi Quaid checked into the San Ysidro Ranch with a bogus credit card, bogus phone numbers and addresses and gave excuse after excuse as they racked up a bill totaling $10,546.96.
The Quaids -- who were arrested in Texas yesterday for the alleged crimes of burglary, conspiracy and conspiracy to defraud an innkeeper -- sent a check for $5,546.96 ... so they still owe 5 grand.
But according to Detective Forney, San Ysidro was small potatoes compared to the swanky Hotel Bel-Air in Bev Hills, where they allegedly stiffed the hotel to the tune of $17,000.
And, just before checking into San Ysidro, the couple allegedly stiffed the Santa Barbara Biltmore Hotel.
Detective Forney says there were numerous attempts to get the Quaids to make good on their alleged bad deeds, but to no avail.

Evi Quaid is using her fine-arts skills to attack the Presidio County Sheriff's deputy who arrested her -- hand-painting a big, fat sign which accuses the officer of being a dirty, bribe-taking cop.

Evi painted the sign -- directed at Deputy James Davis -- on the side of a truck she personally drove and parked outside of Mayor Dan Dunlap's office moments ago. The sign says "Deputy James Davis takes payments ... call & make offers."
But Deputy Davis tells us he won't take the smear campaign laying down, saying, "She's entitled to her freedom of speech, but at some point it becomes libel. I'm considering legal action if it continues."

Randy and Evi Quaid know how to drive a hard bargain ... because we've learned they still haven't paid the bill for which they're being prosecuted.
Sources connected with the case tell TMZ the $5,546.96 the Quaids sent the San Ysidro Ranch to settle the bill they skipped out on isn't the full payment -- not by a long shot.
We're told the Quaids still owe another $5,000. And get this -- we're told Evi called the Ranch and said she and Randy would only pay the balance if they call off the dogs -- i.e., they wouldn't press charges.

Randy and Evi Quaid may have sent a check to the hotel they're criminally accused of stiffing, but the charges aren't going to just disappear -- the Santa Barbara County D.A. wants them to come back and do some splainin'.

We've learned not only was an arrest warrant issued against the Quaids, they've been formally charged with felony burglary, conspiracy and defrauding an innkeeper. They allegedly went to the San Ysidro Ranch and racked up a huge bill -- allegedly with the intent of skipping out without paying.
A Santa Barbara County D.A. tells TMZ the case is still full steam ahead. Chief Trial Deputy Josh Lynn says, "They're going to need to come to Santa Barbara and deal with these charges. Any restitution that's been paid will help facilitate a resolution of the criminal case, but that doesn't mean it will automatically go away."
The Quaids were arrested in Texas yesterday, after Evi put up quite the struggle.
