They haven't been seen together in a while, but Vanessa Minnillo and Nick Lachey finally resurfaced doing what they do best -- vacationing!
The unmarried lovers took time out of their busy schedules of, er, of, um ... they laid out by their hotel pool in Salt Lake City on Wednesday.

FYI - Nick has been busy filming the reality show HIGH SCHOOL MUSICAL - GET IN THE PICTURE, and Vanessa has been shooting a movie. Personally, I find it refreshing that they are not publicity hogs and we see them every week in the mags. They are just living their lives, doing their thing. I think they are an adorable couple!

Nick looks great, as usual. I am glad they can take vacations and should continue doing so as much as they can. Not sure why TMZ is jealous of these two. They seem happy together and make a nice-looking couple. At least their not like others (mention no names) who want as much media attention as they can get.

Nick is in Salt Lake City because he's filming his new show Get In the Picture for the latest HSM picture coming out in October.
Vanessa is visiting him there. I read someone's blog that they were out to dinner the other day at some high end restaurant. I guess Vanessa is finished filming the movie she was doing.

Vanessa and Nick ate at Spencer's For Steaks and Chops on Wednesday with a couple of friends. They were all very polite and left a good tip too!

I just LOVE how TMZ conveniently forgets to mention how they've been saying that Vanessa and Nick had been broken up for the last couple of months. Are they going to admit they were completely wrong? I seriously doubt that! They'll take the hypocritical route (like with Lisa Rinna, when she fooled them with an Ashton Kutcher/Pop Fiction prank).
I like Vanessa & Nick. They're good people.
