Paula Deen defiantly, and tearfully, says she doesn't need to change when it comes to using offensive words, but young Black people do -- oh, and Jesse Jackson's got her back.

Deen burst into tears on 'Today' while telling Matt Lauer, "If there's anyone out there that has never said something that they wish they could take back ... please pick up that stone and throw it so hard at my head that it kills me."

She added, "I is what I is and I'm not changing."

When asked if she had any doubt the n-word was offensive to Black people, she claimed she didn't know because ... "it's very distressing for me to go into my kitchens and I hear what these young people are calling each other. It's very, very distressing."

Deen also managed to do a little name dropping ... claiming she's gotten support from Rev. Jesse Jackson.

Racial scandals aren't always bad for business ... just ask Paula Deen's brother who says the embattled chef's restaurants have been "slammed" with customers in the wake of the N-word drama.

Bubba Hiers -- who is also named as a defendant in the sexual and racial harassment lawsuit against Paula -- was walking around Savannah today when he was asked how the family was coping.

"We're doing fine," Bubba said ... and when asked if Deen's businesses were continuing to thrive despite all of the bad media, he insisted the companies were "slammed" ... and he meant it in a good way.

FYI -- Lisa Jackson, the woman suing Paula and Bubba, worked as the G.M. for Uncle Bubba's Seafood and Oyster House in Savannah, Georgia from 2005 - 2010. Bubba is part owner along with Paula.

Jackson claims Bubba is a racist who dropped the N-word in the workplace and also viewed porn on the kitchen computer.

Paula has previously claimed Jackson is a liar who is just trying to extort the family.

Chicago Blackhawks Stanley Cup Celebration Was Carnivore Heaven

The Chicago Blackhawks partied hard after their dramatic Stanley Cup victory over the Boston Bruins, and lived by that old adage -- to the victor goes lots and lots of meats!!!

Stanley Cup MVP Patrick Kane and the rest of the team headed straight to the famous Harry Caray's Steakhouse once they arrived back in Chi-town early Tuesday morning -- and our 'hawks sources gave up all the deets on their feast:

- Crab cakes
- Lamb chops
- Mini "holy cow" burgers
- Chicken vesuvio (the house special)

Remember, they were eating all this at ... 4:30 AM!!

No word on how much the celebration meal cost -- but the team picked up the tab. We're told this is the exact same menu the Blackhawks had when they last won the cup in 2010.

Superstition ... it's delicious!

If you're wondering what it takes to look like The Rock (aside from ridiculous genetics) the new "Hercules" star just revealed the diet he maintains to play the son of Zeus -- and it's unbelievable.

Rock just posted the breakdown on Twitter -- and it includes 7 full meals with ridiculous quantities of food, including rice, 14 egg whites, all kinds of vegetables, and more than 3 POUNDS of meat.

It's been working too ... Rock's been posting pics of himself during filming (above) and he's more jacked than ever.

Unfortunately, you can't just eat like The Rock to look like him ... you kinda have to go to the gym too.

Paula Deen DROPPED By Major Pork Company

Paula Deen has been DROPPED by Smithfield -- a company specializing in pork products.

Deen had a line of hams with Smithfield ... part of The Paula Deen Collection.

The company tells TMZ, "Smithfield condemns the use of offensive and discriminatory language and behavior of any kind." The statement goes on ... "We are terminating our partnership with Paula Deen."

Smithfield then somewhat sanctimoniously says, "Smithfield is determined to be an ethical food industry leader and it is important that our values and those of our spokespeople are properly aligned."

The chef who won Season 4 of "The Next Food Network Star" is coming out in defense of Paula Deen, saying she's been nothing but a friend to him throughout his career ... even though he's Black.

Chef Aaron McCargo Jr. just released a statement on his Facebook page, writing, "Paula has always been very helpful and supportive throughout my career, and as her friend I'm saddened to see that she is going through a tough time right now."

Aaron asked his fans to give Paula the benefit of the doubt, and added, "We are all human and we should never be too quick to judge anyone."

Translation: I still want Paula Deen to like me.

Billy Ray Cyrus and Tish Cyrus took their daughter Noah out for lunch Sunday in North Hollywood -- but the interesting part -- Tish is leaning her head on Billy Ray's shoulder and they are arm-in-arm!!

The lunch date came 10 days after Tish filed for divorce.

Rev. Al Sharpton Don't Judge Paula Deen For OLD Racist Comments

Rev. Al Sharpton doesn't much care if Paula Deen used the n-word 27-years-ago ... he says it's more about whether she's still using it today.

We asked Sharpton -- a renowned figure in the Civil Rights movement -- if Paula should be forgiven, and he was somewhat sympathetic, saying ... "A lot of us have in the past said things we have regretted saying years ago."

The Rev. added Paula should instead be judged based on the outcome of the current lawsuit ... from a former employee accusing Paula and her brother of using offensive language.

"You can't deal with what is fair and not fair till we see the outcome of the present circumstances she's accused of ... not something 20 years ago."

Sharpton also addresses another hot button racial issue ... fried chicken.

Paula Deen Going to Pot On QVC

If you're lookin' for Paula Deen's pots and pans, you better jump fast, because it looks like her shelf-life on QVC is about to expire.

Deen -- who appears on the product-hawking network to pitch her cookware -- may lose her platform over the "n-word" revelations.

A rep for the network says they have "concerns [over] the unfortunate Paula Deen situation." The rep adds, "Please know that QVC does not tolerate discriminatory behavior."

Now this is the weird part, which makes QVC sound -- how do you say in English -- as spineless as deep-fried octopus. "We are closely monitoring these events and we are reviewing our business relationship with Ms. Deen. In the meantime, we have no immediate plans to have her appear on QVC."

Translation -- They're waiting to see which way the wind blows.

Disgraced chef Paula Deen has committed a far worse crime than using the N-word: she's committed MURDER ... of sorts ... according to Kid 'n Play rapper Chris Reed.

Chris is surprisingly forgiving of Paula's blunder -- he explains why (although, our guess is he hasn't seen THIS GEM yet).

Paula Deen Food Network Blames Paula's Abysmal PR Team

Paula Deen's PR team botched her n-word apology so badly ... the Food Network had no choice but to fire her, sources close to the network tell TMZ.

According to our sources, her management's clumsy damage control -- backing out of the Matt Lauer interview and releasing multiple lame mea culpas -- was the primary reason the Food Network pulled the plug on the celebrity chef.

We're told the apology videos were the last straw -- clinching the Food Network's decision to drop the ax on her. And if you've seen the videos, it's not a big shock. (Apology 1, Apology 2)

But the silver lining ... we're told Paula's son Bobby Deen will be spared ... his Food Network show "Not My Mama's Meals" won't be affected by his mama getting the boot.

Our beauty queen spies tell TMZ ... Erin keeps her body right and tight by eating healthy (like all the time) ... which is why the 25-year-old noshed on a beet salad and spicy tuna on crispy rice as her first post-pageant meal.

5:10 PM PT -- Paula has just released a statement, thanking the Food Network for 11 "great years." She said, "Because of the gift the Food Network gave me, I've had the pleasure of being allowed into so many homes across the country."

Paula Deen's goose has been cooked at the Food Network. Officials tell TMZ they are not renewing her contract, which expires at the end of this month.

Paula apparently was done in for her comments during a deposition in a civil lawsuit, in which she freely admitted to using the N-word in the past.

Deen issued an apology this morning that bordered on ridiculous -- it was heavily edited and frankly insincere.

She issued a second apology shortly before the Food Network said it would not renew her contract.

Paula Deen must have realized how insincere her first video apology was when she posted it several hours ago ... because she's decided to do it again, and this one is much better.

Paula says in the new video she wanted to speak from her heart -- something she clearly didn't do in her first, heavily-edited and publicist-vetted disaster.

This time she speaks in one take, saying she doesn't discriminate against African Americans, Jews or gays. It's not polished, but it seems way more authentic.

Paula Deen Ridiculous Apology For Using N-Word

1:00 PM PT -- FYI, Paula just yanked the video apology from her YouTube channel.

Paula Deen continues to step in it, and we know part of the problem is that her team doesn't have a clue.

She just issued a weird, video apology with an edit after almost every sentence. It's as if some publicist is feeding her lines that she has trouble delivering.

Rather than explaining why she used the N-word in the past -- something she might have been able to explain given her background -- she's just begging for forgiveness. It feels like it's coming from a bunch of suits, and not from her heart. Huge miss.

Sources connected with Deen tell TMZ ... this was an apology produced by committee -- a committee of lawyers, publicists and other managers who don't understand the meaning of the word "apology." They've strung a bunch of words together that make Deen look pathetic ... throwing herself at the mercy of the court of public opinion.

It's sad.
